Ingredients
- 1 Stealthy Green Sauce pack
- 1 package of small potatoes (~1 lb)
- 1 bunch of asparagus, chopped
- 1/4 cup fresh dill, roughly chopped
- 2 tsp salt
- Snap off and discard the tough ends of the asparagus — they'll tell you where to break. Chop the remaining stalks into 2-inch pieces and set aside.
- Rinse the dill and roughly chop about ¼ cup, leaving the woody stems behind.
- Bring a medium pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 10 minutes. Scoop out with a slotted spoon and transfer to a medium mixing bowl.
- Bring the same pot back to a boil and add the asparagus. Cook until bright green, about 2 minutes. Scoop out and add to the bowl with the potatoes.
- Empty one Green Sauce pack into a microwave-safe bowl and heat for 1 minute and 30 seconds. Add to the bowl of asparagus and potatoes.
- Season with salt, then add the dill and fold again.
- Serve warm or at room temperature — it's good either way!
